The Ultimate No-Bake Cheesecake

I guarantee you this recipe will be an absolute hit with everybody, even those who don’t like a traditional cheesecake, after all this is no ordinary cheesecake..

The Secret..

This recipe is simple, affordable, delicious and this is all with practically no mess or mass of washing up either! The secret to this great tasting cheesecake is you do not have any baking involved what so ever, no eggs, no flour, no need for an oven! Perfect recipe for those with little ones who love to be in the kitchen too!

All you require is..

  • Microwave

  • A Mug

  • A Mixing bowl

  • A Whisk

  • A Sieve

  • 1x Tablespoon

  • Greaseproof paper

  • Rolling pin

  • A sandwich bag

  • Scissors

  • 9in/24cm Springform cake tin

The Ingredients

  • 2x Soft Cream cheese 300g

  • Whipping cream 300ml

  • Icing Sugar 200g

  • Lemon juice (1tbs)

  • Packet of digestive biscuits

  • Butter 100g

  • Your choice of flavouring (anything from white chocolate, freshly pressed raspberries, vanilla essence)

  • Your choice of topping (anything from sliced strawberries, malteasers, chocolate shavings

Method

  1. Begin by putting all the butter into your mug and microwave for 20 seconds

  2. Whilst the butter is melting, crush the biscuits in a sandwich bag with a rolling pin.

  3. Add the melted butter to the biscuits and mix together until all biscuit crumbs are coated.

  4. In your mixing bowl, whisk the whipping cream until light and fluffy, add the cream cheese and sieve in the icing sugar, then combining everything together. Add a tablespoon of lemon juice and mix with your chosen flavouring.

5. Line your cake tin with grease proof paper , cut to size with your scissors

6.Pour the crushed biscuits into the base of your lined tin and press with the back of the tablespoon to spread mixture and to level the base.

7.Then add your cheesecake mixture on top of biscuit base and once again flatten.

8. Finally, decorate your cheesecake with your choice of toppings

Into the fridge for at least 4hours or ideally overnight and it’s all done! Simple.
